Cornish Pasty time :)


Inspired by my recent visit to Newquay!

Heat:Pre-heat oven 180c

Time: 20 min prep. 45min-1hr cook.

Innit:
1 packet tesco pastry mix
2 carrots (peeled and diced)
1 medium potato (peeled and diced)
1 medium onion (finely chopped)
1 leek (chopped)
1 small 'tree' broccoli (chopped)
1 mug soya mince
2 x Veg stock cubes (crumbled)
Sprig of parsley (chopped)
Chives (chopped)

Method (Man):
  • Boil kettle. Place all ingredients in large saucepan. Boil until carrot soft :)
  • Mix pastry mix as directed. Split into 2.
  • Roll each ball out into oval shapes.
  • Place mix into pastry. (Add a little gravy granules to thicken if necessary)
  • Fold pastry over and seal edge by pressing down with fingers.
  • Prick top.
  • Bake until slightly browned.
Vegan Cheese can be added for variation.

And the left over mix is lovely on toast :)
